If you’re like us, you sometimes have a hard time deciding what to cook for dinner and what takes the least amount of time to cook! We have a fun & simple recipe for you to try out one of these Summer evenings!
INGREDIENTS:
4 salmon fillets
8 Tbsp honey, for glaze
1 mango, diced
1 cup pineapple, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, chopped
juice of 1 lime
bunch of cilantro, chopped
Extra virgin olive oil
Salt and pepper, to taste
PREPARATION:
Preheat oven to broil. Brush salmon with extra virgin olive oil, and season with salt and pepper on both sides. Brush top side of salmon with some honey. (Make sure it doesn’t spill or drop on the baking sheet because you don’t want your house to smell like burned honey.) Broil the salmon at 500 F for about 13 minutes. Half way through brush it again with some more honey.
While salmon is cooking, mix pineapple, mango, cherry tomatoes and red onion. Squeeze lime juice and drizzle some olive oil. Season with salt and freshly ground black pepper, and top with chopped cilantro. Set aside and let the juices combine.
When salmon is ready, place salmon on a plate and top with the mango pineapple salsa.
